Consumers are asking food companies to deliver more in every product. They increasingly want recognizable ingredients and shorter, simpler labels. At the same time, they still expect great taste, appealing texture, nutritional value, consistent quality, and affordability.
For manufacturers, those expectations are arriving as a tidal wave rather than as separate trends. Consumers want all these attributes in a single package and have little patience for trade-offs. A more familiar ingredient list will not compensate for a disappointing taste. Better nutrition will not sustain repeat purchases if the product is too expensive or has the wrong texture.
The challenge has become more urgent as consumers pay closer attention to what is in their food while economic and operational pressures constrain what companies can deliver. According to recent ADM research, 70% of consumers worldwide opt for products with recognizable ingredients, while 58% seek shorter ingredient lists.
That leaves little room for error. Reformulation can affect sourcing, production efficiency, cost, speed to market, and consumer loyalty. A change intended to simplify a label can create problems elsewhere in the product or manufacturing process. It’s rarely as simple as removing one ingredient or replacing it with another.
Companies must balance four outcomes: simpler ingredient labels, improved nutritional value, products consumers genuinely want to eat, and prices consumers can afford. We see this balance as an important area for innovation and a central focus of our advanced nutrition platform.
Meeting those expectations requires understanding how ingredients interact as a system and considering production and scale while the formula is still being developed. The place to begin is with the complete product a company needs to deliver.
START WITH THE WHOLE PRODUCT
Food ingredients often do more than one job, so changing one element may require adjusting the rest of the product.
For example, sugar provides sweetness, but it can also affect texture, structure, browning, and moisture. Reducing it may require rebalancing both sweetness and texture. Color influences appearance, but it also must remain stable during production and throughout shelf life. Moving to colors from natural sources can introduce new questions about stability. Proteins, fibers, fats, and starches can affect nutrition, mouthfeel, and production simultaneously, which means adding protein or fiber may require changes elsewhere to preserve taste and texture.
Consumers may evaluate taste, nutrition, price, and ingredients separately, but increasingly they want those attributes to come together in one compelling product. Product development should reflect that expectation. Before selecting ingredients, teams should agree on what the finished product has to deliver and which trade-offs consumers will accept.
Those decisions should come before finalizing the formula. Otherwise, teams may solve one problem only to create another. A product may have a simpler label and meet a nutrition goal but lose its expected flavor. It may work in a test kitchen but become too expensive to produce.

DESIGN FOR SCALE FROM THE BEGINNING
Balancing those trade-offs on paper is only the beginning. The next test is scale. A formula can work in the lab and still face problems in production.
Ingredients from natural sources can vary by crop, season, or region. Some flavor materials must be measured in extremely small amounts. Colors may respond differently to heat, light, or acidity. These factors influence supply, consistency, development methods, and cost.
Production cannot be an afterthought. Sourcing, quality, and manufacturing teams should be involved while the product is still being developed.
They need to answer practical questions early. Can certain ingredients be sourced reliably? Will a formula perform consistently from batch to batch? Can the product be made at the right cost?
Innovation is not complete when a team creates a successful sample. It is complete when the product can be made reliably, repeatedly, and efficiently.
WHAT LEADERS SHOULD DO DIFFERENTLY
Capturing this opportunity requires leaders to look beyond individual reformulation projects and decide where to build lasting capability.
1. Choose where simpler labels can strengthen the business.
Not every product needs the same response. Leaders should identify where recognizable ingredients can strengthen a core brand, support a new price point, or open a new category.
2. Fund the full path to market.
Reformulation budgets often focus on product development. Leaders should also account for sourcing, testing, production changes, and scale-up, because those steps determine commercial viability.
3. Create clear ownership across functions.
These projects cross R&D, operations, procurement, quality, and commercial teams. One leader or team should own the trade-offs and protect the product vision from concept through launch.

Consumer expectations will continue to evolve and the companies that build repeatable capabilities, from formulation through commercialization, will be better positioned for whatever consumers ask for next.
Labels may be getting simpler. The innovation behind them should be anything but.
